Greek Chicken Salad:
2 cups Romaine Lettuce
1- 1/2 cup of diced tomatoes, cucumbers and peppers, carrots
5-6 Kalamata Olives
Dressing: Mix together- 3 TBSP dijon mustard, 1 tsp olive oil, juice of a slice of lemon, 1 tsp garlic powder, 1 TBSP red wine vinegar
Top with pine nuts or feta cheese, optional.
